Whizz with tahini, lemon juice and olive oil and you’ve got yourself a delicious vegetable hummus. Roast with the same amount of drained chickpeas + cook for 15 minutes at 180oC. Spare roast chicken is the best in sandwiches, salads and soups or pair with ham for a creamy pie filling. Then, next time you’re in need, microwave from frozen (make sure it’s piping hot!) and add to a curry or fried rice. If you find you’ve got some spare, cool it quickly and portion into freezer bags. Rice is an easy one to overestimate when you’re cooking. If you find yourself with leftover cottage pie, simply add a spoonful of curry paste and use the mixture to stuff pasties.
